Pork Recipes: Grilled Pork Cutlets with Roasted Tomatoes and Sweet Orange Vinegar

Ingredients:

  • 4 Pork Cutlets, no rind
  • Olive Oil
  • Salt
  • Pepper

Salad:

  • 500g cherry truss tomatoes
  • 100g wild rocket
  • 100g danish fetta, diced
  • Orange vinegar
  • ½ brown sugar
  • ¼ balsamic vinegar
  • 2 orange, zested

Grilled Pork Cutlets with Roasted Tomatoes and Sweet Orange Vinegar – Method:

Step 1: Heat pan on medium for 3-4 minutes. Place pork cutlets for 4 minutes on each side or until tender.

Step 2: Put cherry truss tomatoes in a oven heated at 180C. Leave cherry in oven until it slightly browned and shriveled but not burnt.

Step 3: Prepare sauce by putting orange vinegar, brown sugar, balsamic vinegar, orange zest into a saucepan and let it simmer on low heat until vinegar because slightly thick.

Step 4: Serve rocket leaves, roasted tomatoes and danish feta and arrange them evenly on the plate.

Step 5: Serve the pork cutlet gently on top of the salad.

Step 6: Drizzle the sweet orange vinegar on top of the pork cutlet and salad
